Agave Hour at Sucre is less about ticking boxes and more about how things are made. Tucked into Soho, just a short walk from the theatres, it’s the kind of place you drift into—before a show, after work, or whenever the evening feels like it needs a proper start.
 
From Sunday to Thursday, 3pm to 7pm, the bar leans into agave with a tight, thoughtful list of cocktails at £8. Each one is built with care—layered, balanced, and a little unexpected—drawing on tequila, mezcal, and spirits from across South America.

The drinks tell their own stories, each carefully crafted by the team behind the bar. The renowned Chimichurri Margarita is savoury and bright, with olive oil–washed tequila, mezcal, and a punch of herbs, lime, and ginger. The Paloma keeps things crisp and classic with fresh grapefruit. The Belgrano Sour goes deeper—pisco, malbec, and lemon coming together in something rich and quietly bold. And the Andean Sunset brings a gentle heat with pink peppercorn and cranberry. There’s also a non-alcoholic option, the Cos-no-politano, that’s treated with the same attention as everything else behind the bar.

To eat, there are small plates inspired by Argentina and the wider South American table—food that’s made to share, to pick at, to go alongside a second round. It all ties back to Sucre’s way of cooking: fire, flavour, and a respect for ingredients.
